This dip is irresistible. If you're looking for a light, healthy appetizer, this isn't it. But if you want something that's easy to make, tastes phenomenal, and is filling, you cannot beat this.
In a large bowl, stir together the cream cheese and mayonnaise until smooth. Stir in the chiles and peppers. Spread the mixture into a casserole serving dish and sprinkle with Parmesan cheese.
Bake at 375 F for 30 minutes. Alternatively, you can microwave on high until hot, about 3 minutes. (We prefer baking.)
This dip is dangerously good. I really wanted to save my appetite for the turkey dinner at our pre-thanksgiving party, but I kept going back for just one more dip! Super easy to make, too.
Like I said in my comment below, I made this dip for a holiday party and it was a big hit....Fantastic! I will be making it again for a party in a couple of weeks. It doesn't seem right that something this simple should be so good.
I added 6 fresh diced Jalapeños rather than a 4 oz can, and I added about 1/4 cup of leeks.
This is an excellent dip. I must admit that I was surprised (and delighted) by the amount of heat that I got from the canned jalapenos. Very tasty. It disappeared like magic. I have since made it a couple more times for parental unit like people and found that it's still good if you substitute two cans of the chopped instead of one chile and one jalapeno. I didn't like it as well, but this dip is always a hit.
